Just ask\u00a0<strong>Chris Svetlik<\/strong>, co-owner of\u00a0<a href=\"http:\/\/republic-kolache.com\/\">Republic Kolache<\/a>, the start-up bakery that last year introduced Washingtonians to the &#8220;national pastry of Texas.&#8221;<\/p>\n<p>Republic&#8217;s two pop-up locations \u2014 its Saturday residency at\u00a0<a href=\"http:\/\/www.amicodc.com\/\">American Ice Co<\/a>. and its weekend counter at\u00a0<a href=\"http:\/\/unionmarketdc.com\/\">Union Market<\/a>\u00a0\u2014 will both vanish during the last weekend in May. The last day of the American Ice pop-up will be May 28, and the Union Market location will sling its final kolache the following day, May 29.<\/p>\n<p>&#8220;Both were arrangements that were designed from the outset to be temporary,&#8221; says Svetlik, who\u00a0<a href=\"https:\/\/www.washingtonpost.com\/news\/going-out-guide\/wp\/2015\/08\/14\/republic-kolache-is-bringing-the-texas-style-pastries-to-d-c-with-a-weekly-pop-up\/\">launched Republic last year<\/a>\u00a0with another former Houstonian,\u00a0<strong>Brian Stanford<\/strong>. &#8220;It&#8217;s not the greatest timing in the world.&#8221;<\/p>\n<p>No, it&#8217;s not. Republic is still searching for a permanent retail location, but to keep the revenue flowing \u2014 and Republic&#8217;s name in front of customers \u2014 the owners are searching for more temporary spots. Starting on June 3, Republic will sell kolaches on the weekend at\u00a0<a href=\"http:\/\/dachadc.com\/\">Dacha Market<\/a>\u00a0in Shaw, an experiment in peddling the sweet and savory pastries late at night.
