The problem with relying on pop-ups as a retail outlet is that you have no control over their duration. Just ask Chris Svetlik, co-owner of Republic Kolache, the start-up bakery that last year introduced Washingtonians to the “national pastry of Texas.”
Republic’s two pop-up locations — its Saturday residency at American Ice Co. and its weekend counter at Union Market — will both vanish during the last weekend in May. The last day of the American Ice pop-up will be May 28, and the Union Market location will sling its final kolache the following day, May 29.
“Both were arrangements that were designed from the outset to be temporary,” says Svetlik, who launched Republic last year with another former Houstonian, Brian Stanford. “It’s not the greatest timing in the world.”
No, it’s not. Republic is still searching for a permanent retail location, but to keep the revenue flowing — and Republic’s name in front of customers — the owners are searching for more temporary spots. Starting on June 3, Republic will sell kolaches on the weekend at Dacha Market in Shaw, an experiment in peddling the sweet and savory pastries late at night. The Dacha pop-up will run 9:30 p.m. to midnight on Fridays and Saturdays.
